Ingredients for lemon cake from the tin: this is what you need

You will need: 350 grams of soft butter, 350 grams of sugar, 1 packet of vanilla sugar, 6 eggs, 350 grams of flour, 2 teaspoons of flour, 100 grams of chopped almonds, 3 lemons (with the zest!)

And this is how it works: preheat the oven to 180 degrees above and below. Add the lemon zest and squeeze the juice. Important: when removing the skin, make sure to remove any white inside, this will make the cake bitter.

Put the butter, sugar and vanilla sugar in a mixing bowl and cream until the color is slightly melted. Then gradually add the eggs. Add the lemon zest and two-thirds of the juice. In a separate bowl, mix together the baking powder and flour and gradually stir this mixture into the wet ingredients until a smooth batter forms.

Place this dough on a baking sheet lined with baking paper and spread evenly. Tip: It is good to use a slightly higher tray for the cake pieces. Such trays are easy to line with baking paper if you use a trick: wet the baking paper and wipe it carefully. The wet paper can easily be molded into any shape.

Scatter the toasted almonds over the cake. Bake the cake in the oven for 20 to 25 minutes. Then take it out and let it cool. If you want, you can make a thick cheese with the remaining lemon juice and powdered sugar and brush the top of the cake after it has cooled. Garnish the cake with lemon slices. enjoy your meal!
