This recipe, probably from Thuringia, was known in the former GDR and thus named because the surface of the cake turns green after a while – and then looks a bit moldy. How to cook moss cake quickly and easily

  1. Preheat oven to 175 degrees F/F.
  2. Carefully separate six eggs – it’s quick and easy.
  3. First, mix all the wet ingredients well for the batter. Then mix all the dry ingredients in another bowl and add to the wet. Mix everything into a homogeneous dough.
  4. Spread the dough evenly on a greased or parchment-lined baking sheet.
  5. Now cook the base for about 30 minutes until the skewer test tells you it’s done. Then let the banana cake base cool completely.
  6. For the roof, heat the fat and let it cool again.
  7. Then beat the egg whites until stiff and mix in the powdered sugar before the end.
  8. Whisk the fat into the egg whites and spread the cream over the chocolate cake base.
  9. Let the layer harden for a short time in the refrigerator and last, but not least, sprinkle the coffee powder over the mousse cake through a fine sieve.

After a while (it can take up to a day), the chlorogenic acid in the coffee powder reacts It gets a green color with dirty cream and layer. It reminds me of the banana or mold on Halloween. If the moss cake doesn’t turn green, you’ve unfortunately made the brownie layer too thick. It really should just be a wafer-thin layer of powder.
