The secret of the taste of this simple sponge cake: “fragrant blood orange”, frozen juice from the cold collection of Valencia, a combination of ground almonds and selected spices. The juice straight from the cold room is especially convincing with its good, fruity, delicious taste. The best cake is not only baked with the juice, but also sprinkled with homemade blood orange syrup. Irresistible delight combined with fresh yogurt.
Blood orange almond cake with yogurt topping
(for 1 springform pan with a diameter of 26 cm)
For the dough:
6 eggs (M)
1 cent salt
200 grams of brown sugar
300g very soft butter (+ extra for greasing)
300 g of almonds (ground)
2 pinches of cardamom
1 tbsp orange flavor powder
250 ml Fragrant Blood Orange from the Valencian Cool Collection 100 g Splatter Powder
1 packet of baking powder
Blood orange syrup;
250 ml of fragrant blood orange from the Valencian cold collection
3-4 tbsp sugar
100 grams of cream yogurt
1 tbsp refined powdered sugar
Blood orange leaves for decoration
1. Heat the oven to 180 degrees above and below. Separate the eggs. Beat egg whites with salt and sugar until stiff. Mix the rest of the flour ingredients with the egg yolk until creamy. Fold the egg whites into the batter and pour into a greased springform pan. Then bake in the oven for 1 hour. Do a chopstick test to make sure the cake is done.
2. For the syrup, mix 250 ml of blood orange juice and sugar in a small saucepan until everything has the consistency of syrup.
3. Remove the cake, poke small holes with a chopstick and brush the top of the cake liberally with blood orange syrup. Then let it cool.
4. For the glaze, mix the yogurt and powdered sugar until smooth and spread over the cake. Garnish with blood orange fillings if desired.
