Too much salsa and tortilla leftovers? Then Chilaques, a spicy breakfast dish from Mexico, is perfect for him.
Chop the red onion and garlic finely. Fry both in olive oil. Fry the tomato paste together briefly and then add the tomato paste. Add spices and bring to a boil. Uncover and cook on medium-high for 15 minutes.
When everything boils, preheat the oven to 180 degrees. Cut tortilla wraps into 5cm wide strips. Cut 3-4 times. Brush the slices with olive oil and roast in the oven for 10 minutes until cooked through.
Remove the pot from the oven along with the meat. Fry the baked chips in the soup. Now heat some oil in a large pan and add 4 eggs. With the lid closed, fry the fried egg on medium heat for 6-7 minutes.
Cut the radish into thin slices and the red onion into slices. Cut the avocado in half and peel it and cut it into thin slices.
For each serving, place some of the tortilla chips from the soup on a plate. Arrange a fried egg, red onion, radish and half an avocado on top. Season with salt and pepper. Chop fresh coriander and sprinkle over serving, if desired. complete!
